Spicy Soul BBQ™ Black Eyed Peas
Ingredients
- 3 c frozen black eyed peas
- 1 tbsp olive oil
- 1 large onion
- 1 medium green pepper
- 2 large cloves garlic, minced
- 1/2 tsp dried rosemary
- 1/2 tsp dried thyme
- 1/2 tsp dried marjoram
- 1 c Spicy Soul BBQ™
- 1/4 c Zesty Mustard BBQ™
- 2 tbsp fresh lemon juice
- 1 to 2 tsp. salt or to taste
- Black pepper to taste
- *Meat add-ins: bacon, kielbasa, ham
- *Vegetarian add-ins: Tofurkey™ kielbasa, cubed, pressed, EXTRA firm tofu
Preparation
- Preheat oven to 350 degrees.
- Cook: frozen black eyed peas in 2-1/2 c vegetable broth for 40-45 minutes.
- In frying pan: caramelize onion, pepper, and garlic.
- Cook 5 minutes then add meat or vegetarian extras and brown.
- In a bowl: combine Spicy Soul BBQ™ Sauce, Zesty Mustard BBQ™, lemon juice, herbs, salt, and pepper.
- Whisk until mixed.
- When beans are cooked: pour in beans, vegetables, and add-ins.
- Mix well.
- Pour into casserole dish and bake 25 minutes or until bubbly and brown on top.
